#MeatFreeMonday | Sorted Vegetarian Stuffed Peppers Recipe

Today, for #meatfreemonday, I am sharing with you a vegetarian recipe which my sister found for me, on the Sorted Food youtube channel.

It’s one of those recipes which I nearly know by heart since I did it more than once. All you need for this recipe is:

  • 2 red peppers
  • 1/2 mug basmati rice
  • 1 pinch Cajun spice
  • 1 pinch turmeric
  • 1 small red onion
  • 1 bunch fresh parsley
  • 1 handful black olives (pitted)
  • 4 sun-blushed tomatoes
  • 1 or 2 ball mozzarella
  • 1 handful mixed salad

It doesn’t contain much dairy products so you can easily veganise it! 😉
