I am buying bananas for my smoothies. There are times that I don’t do the smoothies so the bananas that I had bought quickly ripen and have to throw them away. I don’t like throwing away food. Therefore I wanted to find something to help me prevent from throwing away any more bananas. Then I have remembered The Grassy Hopper’s vegan banana bread that I was having every morning when I was in Valletta.
So I looked up vegan banana bread recipes online but there was a lot to choose from. To narrow it down, I have asked other vegans in Malta for suggestions. I chose and modified one of the suggested recipes, which you can find below.
Vegan Banana Bread Ingredients
- 3 medium ripe bananas
- ¼ cup almond milk
- 2 tsp vanilla extract
- ½ cup unrefined sugar
- 1 tsp cinnamon
- ½ tsp salt
- ¼ cup coconut oil
- 1 tsp baking soda
- 2 cup grounded oats
Vegan Banana Bread Method
- Blend the bananas with the almond milk.
- Mix the rest of the ingredients with the banana mix.
- Spray non-stick spray in or put baking paper in a loaf pan.
- Pour batter in the prepared loaf pan.
- Bake for about 45 minutes in 175°C oven.
