Today, for #meatfreemonday, I am sharing with you a vegetarian recipe which my sister found for me, on the Sorted Food youtube channel.
It’s one of those recipes which I nearly know by heart since I did it more than once. All you need for this recipe is:
- 2 red peppers
- 1/2 mug basmati rice
- 1 pinch Cajun spice
- 1 pinch turmeric
- 1 small red onion
- 1 bunch fresh parsley
- 1 handful black olives (pitted)
- 4 sun-blushed tomatoes
- 1 or 2 ball mozzarella
- 1 handful mixed salad
It doesn’t contain much dairy products so you can easily veganise it! 😉
